From wine to verjus and smoked ham – always hand in hand with nature

How it all started 

The winery Gsellmann Hans & Andreas is a family business in third generation. The knowledge and especially the love for wine has been handed on from generation to generation. And so it happened that the wine has shaped the family, and not the other way round. It tells the story of those who participated in its ripening.

In the meantime, Andreas Gsellmann is responsible for the vinification resp the wine style. He joined the family winery after a work placement at Count Stephan Neipperg in St. Emilion. The time in France also lead to the switch to bio-dynamic cultivation at Gsellmann winery. 

This is what the winery stands for today 

In 2007, Hans and Andreas Gsellmann started to convert the winery into a bio-dynamic winery, because nature is the measure of all things. In 2011, the winery was certified according the guidelines of „Respect – biologically dynamic quality“ ("Respekt - biologisch dynamische Qualität").
And so the Gsellmann family focuses on support instead of exploitation and on strengthening the immune system of the plants, the soils and the microorganisms that make the soil fertile. They use biological and plant strengthening means like tea (camomile, field horsetail, nettle etc) and put emphasis on a natural, balanced fertilisation.
The production of authentic and original wines is of great importance to Andreas Gsellmann: „Great wines arise from what is already there, and not from trendy accessories.“ The grapes are processed in a traditional and natural manner, because the wines should be a reflection of the people and the region. 


  • Rosé: Zweigelt – St. Laurent Rosé start
  • White wines: Welschriesling start, Chardonnay, Pannobile, Weißburgunder, Traminer, Grauburgunder
  • Red wines: Blauer Zweigelt start, Blauer Zweigelt Heideboden, Blaufränkisch, St. Laurent, Pinot Noir, Heideboden Rot, Pannobile Rot, Pinot Noir Goldberg, Gabarinza
  • Sweet wines: TBA Chardonnay, ice wine, Ice wine Zweigelt – St. Laurent, Ice wine – Welschriesling 
Andreas Gsellmann has developed his own line with great dedication. It is visually differentiated by a brand new label and it is based on the three themes of handicraft, attentiveness and finesse.


For two years now, pigs are part of the winery. And since this year, you can try delicious salami, fine smoked ham and blood sausage. In spring 2014, the homemade prosciutto will be ready as well – after a two year ripening period.
The winery also makes grape juice and a Traminer orange wine, which was fermented on the mash for 14 days.
Besides that you can also get a verjus, a juice made of green grapes. Due to its fine and fresh acidity it’s perfect for marinating or cooking fish or meat, as basis for a salad dressing or for refining a soup. Mixed with water it’s a great thirst quencher!
